Temperature is the most important factor in the proper storing of wine. If kept too cold, wine can freeze or expand to the point that the cork is pushed out of the bottle. Wines that are kept in an environment that is too hot (above 77 or 78 degrees Fahrenheit) will ãcookä and be damaged beyond repair. The optimal temperature for cellaring wine for mid-to long-term storage is 55 degrees Fahrenheit (12 degrees C). It is also very important to maintain a constant temperature, as fluctuations can affect the aging process. |

a humidity-controlled environment?

Humidity is another factor in the proper storing
of wine. Low humidity can dry the cork and allow oxygen to seep in and
come in contact with the wine. The wine then becomes ãoxidizedä or ãmaderizedä and
takes a brownish color. Alternately, too much relative humidity in the
cellar causes mold and mildew, which will damage wine bottle labels.
The ideal relative humidity is approximately 75 percent. Sunlight can also affect the aging process. It is important keep to wines out of direct sunlight, which is one reason many wines, especially reds, are bottled in tinted bottles. As such, white wines are usually the most susceptible to sunlight damage. Positioning is also important. Wine must always be in contact with the cork so that the cork does not dry out and allow oxygen to come in contact with the wine. Stored wine bottles are normally kept in a horizontal position, although many wineries store and ship bottles in an inverted position. Shock or agitation to aging wine bottles can disturb the sediment and affect the aging process, as well. |
